If you’re looking for a simple dessert, this one’s for you! Of my many recipes, this one is my husband’s favorite and has been since I first made them for him when we were sophomores in college. I’m sure they have a fancier name, but in our house, they’re know as “cookie bars.” Here’s what you’ll need:
-1 box of yellow cake mix
-1/3 cup of vegetable or canola oil
-2 whole eggs
-3/4 cup chocolate chips (I use semi-sweet)
To prepare them, preheat your oven to 350 degrees and grease a 13 x 9 inch pan with cooking spray. Combine the first three ingredients in a mixing bowl until all of the powder is evenly mixed in. Stir in the chocolate chips. Pour the dough into the pan and use your hands to pat it down until it covers the pan evenly. Bake for about 15 minutes or until light golden brown on top. Voila! They taste best served warm from the oven with a cold glass of milk. Enjoy!
